Lemon Chicken Pasta

Serving Size: 4

Ingredients:

  • 400 g spaghetti or linguine
  • 3 tablespoons olive oil
  • 3 tablespoons salted capers, rinsed
  • 2 cloves garlic, sliced
  • 2 small chili peppers, seeded, chopped
  • 3 chicken fillets or breasts, cooked and shredded
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • 1 cup basil leaves, chopped
  • Salt and pepper to taste
  • 1/2 cup parmesan cheese, grated

Directions

Place the pasta in a large saucepan of lightly salted boiling water and cook until al dente.

Drain.

While the pasta is cooking, heat a deep frying pan over high heat.

Add the oil, capers, garlic and chillies and cook for one minute.

Add the chicken and lemon zest and cook, stirring, for four minutes or until the chicken is heated through.

Add the pasta to the pan with the lemon juice, basil, salt and pepper and toss to combine.

Place in serving bowls and top with parmesan.
